Dovecot's config file is a moving target, so if you back up on a system
that has dovecot installed which uses one configuration file format, and
you restore on a version that uses a new configuration file format, you
will have to manually convert between the formats, or just use the one that
vPostMaster installed.

That's what you should do.

That sounds about right. You'll need to try setting that up and see if
anything else is unhappy, but that's the obvious thing that needs to be
preserved.
